Spring-Inspired Quinoa Salad

Ingredients
✅ 1 cup quinoa, rinsed
✅ 1 ½ cups water or vegetable broth
✅ 1 bunch asparagus, trimmed & cut into 1-inch pieces
✅ 1 cup fresh peas (or frozen, thawed)
✅ 1 cup radishes, thinly sliced
✅ ¼ cup fresh mint, chopped
✅ ¼ cup fresh parsley, chopped
✅ ¼ cup feta cheese (optional)
✅ ¼ cup walnuts or almonds, toasted
✅ ¼ cup extra virgin olive oil
✅ Juice of 1 lemon 🍋
✅ 1 tsp Dijon mustard
✅ 1 garlic clove, minced
✅ ½ tsp salt & pepper
Instructions
1️⃣ Cook the quinoa: Bring water or broth to a boil, add quinoa, cover, and simmer for 12-15 minutes. Fluff with a fork and let cool.
2️⃣ Blanch the asparagus & peas: Boil for 2 minutes, then transfer to an ice bath to keep them vibrant. Drain.
3️⃣ Make the dressing: Whisk olive oil, lemon juice, Dijon mustard, garlic, salt & pepper.
4️⃣ Assemble the salad: Toss quinoa, asparagus, peas, radishes, mint, parsley, and nuts in a bowl. Drizzle with dressing and toss to combine.
5️⃣ Serve: Top with feta (if using) and enjoy fresh!
